Irish Soda Bread
- 4 c. flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 2 Tbsp. sugar
- 2 c. buttermilk
- 2 c. raisins
Preheat oven to 450 degrees. Soak raisins in warm water for about 20 min. Measure dry ingredients into a bowl and mix together. Pour buttermilk into dry ingredients in a steady stream while mixing with a wooden spoon or low speed of a mixer. Do not overmix. Drain raisins and stir into the dough. Dough will be VERY wet. On a heavily floured board, divide dough into two loaves and shape into rounds. Place on a cookie sheet. With a sharp knife, cut an "X" in the top of each round loaf. Bake for 30 min, or until done (test with a knife or a cake tester).
